SO easy and it has all my favorites. Chocolate, peanut butter and cream cheese...doesn't get much better than that! I've made these so many times, I can do it with my eyes closed. lol They last in the freezer for weeks...that is, if they last that long!

Ingredients

  • 4 oz (1/2 package) cream cheese
  • 1/4 cup creamy peanut or almond butter
  • 2 tablespoons Swerve sweetener or the sweetener of your choice. Conversion chart and information about natural sweeteners.
  • 1/2 cup sugar-free dark chocolate chips, crushed. I use Lily's Chocolate Chips on Amazon.

Instructions

Either soften cream cheese and peanut butter in the microwave on DEFROST for 1 minute and 30 seconds, or allow them to soften at room temperature on counter.

Combine peanut butter or almond butter, cream cheese, and sweetener, stirring until well-mixed and smooth.

Grind up the 1/2 cup sugar-free dark chocolate chips. Lily's Chocolate Chips

Use a melon size scooper and scoop dough, forming balls and roll them into the crushed sugar-free chocolate chips.

Either use a mini-cupcake aluminum pan, a mini cupcake silicone tray or arrange your cheesecake bombs on a baking sheet lined with parchment paper.

Freeze the cheesecake bombs for 2 hours or until solid.

Store in the freezer in an airtight container or a zip lock freezer bag.

When right out of the freezer, wait a minute or 2 before biting into it, so it can soften up a bit. YUM!
