Cheesy Cauliflower Rice

I’m loving this low-carb cooking! I’m finding divine recipes…with divine tastes! Shown here served with my Pesto Lamb Chop, this Cheesy Cauliflower Rice only has 2.2 Net Carbs.

Cheesy Cauliflower Rice

Low-Carb and Keto Friendly, this side dish is easy and tasty and goes with just about anything.


  • 4 cups cauliflower, riced
  • 1 TBL butter
  • 1/2 tsp seasoned salt
  • 3 TBL cream cheese
  • 2 Cups cheddar cheese, grated (I didn't have Cheddar, so I used Mexican Shredded)
  • Salt and Pepper to taste
  • If you want, you may top each serving with bacon bits and/or scallions



Melt the butter over medium heat and add riced cauliflower.


Add the seasoning and cook for 7-8 minutes.


Turning down the heat, stir in cream cheese and cheddar cheese until melted.


I used an ice cream scoop for each plate and topped with scallions.


Bacon bits are good also...I didn't have any!
