Low-Carb and Keto Friendly, this side dish is easy and tasty and goes with just about anything. Melt the butter over medium heat and add riced cauliflower. Add the seasoning and cook for 7-8 minutes. Turning down the heat, stir in cream cheese and cheddar cheese until melted. I used an ice cream scoop for each plate and topped with scallions.
