A perfect salad for the summer either as a side salad or as an entree with a baguette.


  • 1/2 small watermelon, cubed
  • 1 Large cucumber, peeled and cubed
  • 1/2 Cup Kalamata olives, sliced
  • 1/4 red onion, sliced thin
  • 6-8 fresh basil leaves, chopped loosely
  • 2 oz thinly sliced Jarlsberg Swiss Cheese
  • 2-3 slices Proscuitto torn into bite size pieces



Toss with juice of one lemon and 2 Tablespoons of olive oil....#YUM!
