Crock Pot Garlic Chipotle Lime Chicken

Crock Pot Garlic Chipotle Lime Chicken

Prep Time: 10 minutes Cooking Time: 4-6 hours on HIGH or 6-8 hours on LOW

Just the perfect amount of kick to enjoy these tender thighs. Serve them over white rice, brown rice, cauliflower rice, or sauteed spinach, or a medley of sauteed or steamed vegetables OR whatever you have in the frig that you need to use up, right? They're great cold over salad for lunch the next day, too.


  • ⅓ cup tomato sauce
  • 2 tbsp olive oil or avocado oil
  • 3 garlic cloves
  • 2 tbsp mild green chilies, canned
  • 1 tbsp apple cider vinegar
  • 3 tbsp lime juice
  • ⅓ cup fresh cilantro or flat-leaf Italian parsley (additional to sprinkle over dishes)
  • 1 ½ tsp sweetener of choice
  • ½ tsp to 1 tsp ground chipotle powder
  • 1 tsp sea salt
  • 1/4 tsp black pepper



In a food processor or blender, add all the sauce ingredients and pulse until smooth.


In your crock pot, add chicken breasts or thighs.


Pour the sauce over chicken.


Cook for 4 to 6 hours on high or 6 to 8 hours on low.


Serve over rice or cauliflower rice or vegetables with additional cilantro, cubed limes and bread of choice.
