Just like Mom’s Chicken Soup…

I’m loving my Instant Pot! Why did it take me so long to discover it? Thanks, @mandeesmeals for turning me on to the Instant Pot through your Instagram posts!

Chicken Soup….oh so good. About 30 minutes from start to finish. #instantpotrecipes.

David says, hands down, “this is the best-flavored chicken soup I’ve ever had.” I didn’t do anything special to the recipe except add rosemary, so I give all the credit to the Instant Pot and using chicken thighs instead of breasts.

I serve it with my Blue Cheese Wedge Salad.

We can't get enough of this chicken soup. The flavors are SO good and I give all the credit to the Instant Pot, the Instant Pot recipe and the fact that I used chicken thighs instead of breasts.


  • 1 large carrot, sliced
  • 1 medium onion, sliced
  • 2 celery stalks, chopped
  • 2-4 garlic, minced
  • 1.5 oz boneless, skinless, free-range chicken thighs / cut up into large chunks
  • 32oz organic chicken stock
  • 1 bay leaf
  • Salt/Pepper to taste



Program your Instant Pot to Pressure Cook for 8 minutes on High. SO GOOD!


YES, LITERALLY, that's it!


I serve it with my Blue Cheese Wedge Salad.
