Meatloaf Mini’s – Keto style

I had a pound of ground pork that I was going to use for last night’s dinner but decided on something else. So…what to do with it, besides freezing? I’m trying to maintain a low carb, no added sugar regimen, so I decided to make something I could incorporate that into. Whalla! Very good!…if I do say so myself. 🙂

Makes 12 mini loaves @ 2 pieces per serving @ 1.5g Carbs

Of course, you may use any size muffin tin, right? This is my daughter’s brownie pan that I borrowed because it’s nonstick and my muffin tin isn’t and I didn’t have any muffin liners!

Just store them in the fridge and micro for 10-20 seconds depending on your microwave and also, how many you’re microwaving at one time.

Prep Time: 10-15 minutes Cooking Time: 30-35 minutes

Made in a muffin tin...perfect for on the go or a quick protein boost. SO good! Next time, I'm adding some heat...probably 1/2 minced jalapeno or add some hot sauce to the tomato sauce. Yum.

Ingredients

  • 1 lb. ground anything! Pork, Beef, Turkey, Chicken
  • 1/2 cup cauliflower rice
  • 1/2 spinach, chopped or any green veggie you like
  • 1 egg
  • 1/4 cup grated Asiago OR parmesan cheese
  • 2 tsp garlic powder
  • 1 tbsp dried minced onion
  • 1 tsp salt
  • 8 oz shredded cheese of your choice OR small slices of mozzarella
  • 8 oz no sugar added pasta sauce OR just plain tomato sauce if that's all you have. I use RAO's Marinera.

Instructions

Preheat oven to 400 and spray 12 hole muffin tin with cooking spray.

Stir together meat, cauliflower rice, grated veggie or chopped spinach, egg, parmesan cheese, garlic, onion, and salt.

Divide the meat between the holes of the prepared muffin tins.

About a heaping tablespoon of shredded cheese on each meatloaf.

Spoon a little sauce on each.

Bake for 30-35 minutes until cooked through.
