I’m trying to maintain a low carb, no added sugar regimen, so I decided to make something I could incorporate that into. Whalla! Very good!…if I do say so myself. ๐

Made in a muffin tin...perfect for on the go or a quick protein boost. SO good! Next time, I'm adding some heat...probably 1/2 minced jalapeno or add some hot sauce to the tomato sauce. Yum. Preheat oven to 400 and spray 12 hole muffin tin with cooking spray. Stir together meat, cauliflower rice, grated veggie or chopped spinach, egg, parmesan cheese, garlic, onion, and salt. Divide the meat between the holes of the prepared muffin tins. About a heaping tablespoon of shredded cheese on each meatloaf. Spoon a little sauce on each.
