How something so simple to make can taste so good...is beyond me. I'm loving these Keto sweets! I can't keep these longer than 1 or 2 days in this house. Combine the macadamia nuts, pecans and salt to a food processor. Pulse on high for 3-5 minutes or until the batter is smooth. Transfer the batter to a mixing bowl. Add the coconut flakes and melted butter to the mixing bowl with the nuts and pecans and stir to combine. Prepare a baking sheet with parchment paper. Using a small ice cream scoop or spoon and scoop the dough. (about 2 teaspoons) Flatten and shape into a cookie with your hands. Repeat for all the dough until you have 14-16 cookies. Place in the freezer 1-2 hours to set.
