No-Bake Coconut Keto Cookies

Easy, No-Bake Coconut Keto cookies, with Pecan and Macadamia nuts, taste like cold, buttery macaroons! How great is that? Omg…SO good!

Of course, you may substitute a combination of any of your favorite nuts for the ones here, right? Pistachios, walnuts, cashews…and the list goes on. Also, these cookies are best if stored in the freezer.

How something so simple to make can taste so good...is beyond me. I'm loving these Keto sweets! I can't keep these longer than 1 or 2 days in this house.

Ingredients

  • ½ cup raw macadamia nuts
  • ½ cup raw pecans
  • ¼ t sea salt
  • 2 T grass-fed butter, melted
  • 1 cup unsweetened coconut flakes

Instructions

Combine the macadamia nuts, pecans and salt to a food processor. Pulse on high for 3-5 minutes or until the batter is smooth.

Transfer the batter to a mixing bowl.

Add the coconut flakes and melted butter to the mixing bowl with the nuts and pecans and stir to combine.

Prepare a baking sheet with parchment paper.

Using a small ice cream scoop or spoon and scoop the dough. (about 2 teaspoons) Flatten and shape into a cookie with your hands.

Repeat for all the dough until you have 14-16 cookies.

Place in the freezer 1-2 hours to set. YUM!
