Strawberry/Goat Cheese/Heirloom Salad

A staple in our house and you can change it up according to what you have in your fridge and pantry!

Strawberry/Goat Cheese/Heirloom Salad

Fresh, tangy and is a perfect luncheon summer salad.

Ingredients

  • INGREDIENTS:
  • 4 C Mixed medley of greens to your preference
  • 5 - 8 Strawberries
  • 2-3 oz Goat Cheese
  • 10 -15 Mixed Heirloom Cherry tomatoes (sliced in half)
  • 1/8 C Walnuts (optional)
  • 1/4 C Fresh Basil (chopped or torn)
  • Salt and Pepper to taste
  • MY GO-TO VINAIGRETTE:
  • 4 Tablespoons Extra Virgin Olive Oil or Roasted Walnut Oil
  • 1 Tablespoon Vinegar (balsamic, white wine, apple cider, tarragon, sherry, red wine, etc.)
  • OR 2 Tablespoons freshly squeezed lemon juice
  • OR a combination of 1 Tablespoon vinegar + 1 Tablespoon lemon juice if you like it super zesty like me.
  • 1/2 to 1 teaspoon stoneground or Dijon mustard
  • Sea salt & freshly ground black pepper to taste

NOTE: Don't have these exact ingredients? Use what you have!

No strawberries? How about sliced grapes, peaches, mandarin oranges, peel some Cuties, blueberries, sliced mangos or papayas! Any variety tomatoes...Feta, gorgonzola or blue cheese are great! ...Pepitas, sunflower seeds or sliced cashews, rock.

The only ingredient that remains is the Vinaigrette...best with cheese and salads....just IMO.
