Zappa Toscana Soup – Low Carb

Wow…I tried for the first time, using their plant-based sausage and it was wonderful! I’m trying their Beyond Burger tonight…I’ll let you know.

Zappa Toscana Soup - Low Carb

I adapted this recipe from and used Beyond Meat sausage instead of regular pork sausage. This was my first time trying Beyond Meat products and I loved it! Easy recipe with a super amount of good tastes and low carb to boot!


  • 1 lb Beyond Sausage
  • 4 slices bacon, diced
  • 1 small onion, diced
  • 1 head cauliflower, diced
  • 32 oz veggie broth
  • 4 cloves garlic, minced
  • 1/2 cup half n half
  • 2 cups spinach
  • A handful of cherry tomatoes sliced (optional for color)
  • Green chilies or jalapeño (optional)
  • Crushed red pepper flakes
  • Shredded Parmesan
  • Salt n pepper



Brown the sausage


When browned, add broth, onions, garlic, and cauliflower.


Cover and cook on medium heat for about 15 minutes or until cauliflower is tender.


Add in the half-and-half and the spinach and cook for about five minutes.


Add a pinch of salt n pepper and serve with Parmesan cheese and crushed red pepper flakes on the side.
